6 cups organic spinach (chopped)
1 cup pickled red onions (or pickled beets, chopped, links in Chef’s Notes)
1 cup orange (sectioned and cut into 1” pieces)
½ cup pomegranate arils
lime or lemon juice (freshly squeezed, see Chef’s Notes)
salt (optional to taste)
pepper (optional to taste)
½ cup slivered almonds
1 batch of Orange Shallot Vinaigrette (optional, link in Chef’s Notes)

Assemble your salad: Add the spinach, pickled onions or beets, orange slices, and pomegranate arils to a large bowl. Toss.
